Make the best Tandoori Chicken in your Big Green Egg

We love barbecue, we love burgers, we adore sausages, we’re keen on chargrilled steak. But, when you’ve got a Big Green Egg, you can cook so much more. Big Green Egg owners really appreciate the ease of cooking you have with this barbecue, so they use it regularly. 

When you’re cooking on your EGG often, it’s really great to learn some new recipes to have a change from time to time. Increase your cooking device repertoire and you’ll always have a show stopper to serve up when friends or family come around. This recipe for Tandoori Chicken is so succulent and packed full of flavour. Why not give it a go? You’ll need a good 8 hours for the marinade to work its magic, so be sure to prepare this in advance. 

You’ll need…

4 pounds of chicken thighs

For the marinade:

1 1⁄2 cups of plain yogurt
1⁄4 cup freshly chopped cilantro
2 tablespoons freshly squeezed lemon juice
2 tablespoons of chicken stock
1⁄2 teaspoon cayenne pepper
1⁄4 teaspoon ground cloves
1 1⁄2 tablespoons garam masala
1 tablespoon onion powder
1 teaspoon ground cumin
1 tablespoon garlic powder
1 tablespoon paprika
2 tablespoons milk

How to make it…

There may be a lot of ingredients there, but this recipe is surprisingly simple to make. The first step is simply to get a large bowl and mix everything except for the chicken thighs together. How easy was that? Pour the marinade mixture into a large seal-able plastic bag and add the chicken. Now simply pop this in the fridge for 8 hours, or just leave it overnight until you’re ready to cook. 

When you’re hungry and ready to cook up this taste sensation, set your EGG to cook indirect with the convEGGtor at a temperature of 400F (204C). Remove the chicken from the bag and place them on the EGG with the chicken skin downwards onto the grid. Cook for ten minutes then turn them over. Cook for a further half an hour. The temperature should reach around 165F (74C).

Now you’re ready to remove the chicken and serve! They’re delicious with rice, or salad and naan bread, warmed through on your Big Green Egg.
