Crab with Herbs and Butter

A low fat and full of protein recipe -ideal for vegetarians or fasting periods


 For the crabs
·                  10 Crabs from Foodsaver
·                  1 bay leaf
·                  5 black peppercorns
·                  1 sliced leek
·                  1 sliced carrot  from Foodsaver
·                  1 celery stick thinly sliced
·                  ½ cup of white vinegar  from Foodsaver
For the herb-infused butter
·                  3 tablespoons of butter from Foodsaver
·                  1 tablespoon olive oil from Foodsaver
·                  1 teaspoon of Ardo chives from Foodsaver
·                  1 teaspoon Ardo cubed red chilli  from Foodsaver
·                  1 teaspoon Ardo cubed ginger from Foodsaver
·                  Zest of one lime
                    Salt & Pepper  from Foodsaver

Serve with Ardo Asparagus from Foodsaver


 For the crabs
Wash and clean the crabs in cold water. Add all the other ingredients in a saucepan full of water and boil for around 10 minutes.
Add the crabs in the boiling water and cook for 15-20 minutes. Remove the froth from the surface of the saucepan with a perforated spoon every now and then.
For the herb infused butter
Melt the butter in a frying pan over low heat.
Add the olive oil and then the chives, the red chilli and the ginger and stir for 2 minutes. Remove from the stove and add the lime zest, the salt and the pepper.  
Finally, take the hot crabs and break them in pieces at their heads and claws with a special tool. Serve with the butter and sautéed asparagus.
