For the crabs
Wash and clean the crabs in cold water. Add all the other ingredients in a saucepan full of water and boil for around 10 minutes.
Add the crabs in the boiling water and cook for 15-20 minutes. Remove the froth from the surface of the saucepan with a perforated spoon every now and then.
For the herb infused butter
Melt the butter in a frying pan over low heat.
Add the olive oil and then the chives, the red chilli and the ginger and stir for 2 minutes. Remove from the stove and add the lime zest, the salt and the pepper.
Finally, take the hot crabs and break them in pieces at their heads and claws with a special tool. Serve with the butter and sautéed asparagus.
